If you are looking for a chocolate cake recipe that will feed a crowd AND that has a secret ingredient to make that cake moist and fluffy you’ve just got to try Grandma Katie’s Chocolate Cake recipe. I think this would be a perfect recipe for a family reunion, for your wedding reception, at the church social, any function where you are expecting a crowd.
Chocolate Cake
Ingredients:
- 2 lbs, 8oz butter
- 4 lbs sugar
- 1 1/2 T salt
- 2 T vanilla
- 6 lbs (3 quarts) mashed potatoes —>secret ingredient
- 16 eggs
- 2 lbs, 8 oz flour
- 2 1/2 cups cocoa powder
- 5 oz (1 cup less 2 T) baking powder
- 1 cup milk
Method:
In a large mixing bowl cream butter, sugar, salt and vanilla. Add lukewarm potatoes and cream until smooth. Blend in eggs. Sift together flour, cocoa and baking powder. Add alternately with milk to the potato mixture. Mix only until smooth, batter will be thick. Spread in two lightly greased sheet pans (16×25x1). Bake at 350 degrees (moderate oven) for about 35 minutes. Once cooled dust with powdered sugar or frost each of the cakes. Serves 100 – portion size 2 1/2′ x 3″.
